Everything I know about Italian cooking I learned from my grandma, and from "Goodfellas"...

…not to mention The Godfather and Italianamerican, of course.

Above, the garlic and the razor blade—step one in preparing the tomato sauce for my last pasta and sausage and meatballs feast before I commit myself to about a month of seriously South-Beaching it. Maybe I’ll start a feature on this blog called “The Cinephile Gourmet” or something…

I loved that razor blade tip from GOODFELLAS. I never tried it, because I can’t cook, but it always sounded pretty ingenious to me.

Don’t put too many onions in the sauce.

  • The Chevalier says:

That’s one of those things everybody tries once. Like the bit in Miller’s Crossing about shaving with cold water.

I was eight when Rocky came out; every contemporary I’ve asked downed a glassful of raw eggs shortly after.
No image in film makes me salivate like Paulie’s sausages. (Quiet, you.)

@vt27: Oh, you don’t have to tell me twice. One of the things that makes me the most batshit crazy is finding long, soggy strings of onion in a tomato sauce. Here’s how I do it: along with slicing the garlic extra thin (and pace, Chevalier, I use the razor method every time) I also dice, very finely, one small onion. Then I cook up the mixture in some olive oil until it’s down to almost half a reduction, and throw that in with the tomatoes. The slow-cooking of the sauce does the rest.

Glenn, say stuff about the fact that Kent Jones has just named executive director of Scorsese’s World Cinema Foundation, and the fact that all of their stuff will be coming out via Criterion.

  • Brian says:

Along the same lines, any thoughts about the announcement that Scorsese will be making a Sinatra biopic?

  • Glenn Kenny says:

@Jeff—I don’t have much to say about Kent’s appointment and the big plans for the World Cinema Foundation besides, “That’s great!” I hope to get some more illuminating remarks from Kent himself sometime in the near future, which I’ll share here.
As for the Sinatra pic, well, such announcements are rarely worth the paper they used to be printed on. And as far as the approved-by-the-estate aspect of it goes, in that way madness generally lays. I’d just as soon look forward to the maestro’s “Silence,” and see how the Blue-Eyes project develops once it’s closer to a reality.

That makes sense– I remember being disappointed when Scorsese’s announced adaptation of Nick Tosches’ DINO fell through several years ago, so I suppose we shouldn’t get our hopes up. I do like the IDEA of him working on a Sinatra pic, though, even though I’m having a hard time thinking of who could play the lead (neither DiCaprio nor Johnny Depp– the two names I’ve heard bandied about– really do it for me in that part, their obvious talents notwithstanding).

    Low carb booze includes:
Vodka and sugar free crystal lite (or something similar)
    Rum and diet coke
Good luck with the diet.…dieting sucks.

  • Fischer says:

James Franco for Sinatra, of course, although a Sinatra biopic is of no interest, and a Scorsese Sinatra biopic is, at this point, doubly of no interest.

  • Chris says:

Glenn: got my Sonora Review DFW in the mail today. Great, great issue.

  • Jason M. says:

WRT the World Cinema Foundation: apparently one of their projects this year is Edward Yang’s “A Brighter Summer’s Day.” Put this together with the news of Kent Jones’ new gig, and consider my day made in a major way. Hell, it makes Criterion’s announcement of Playtime on Blu-ray this August seem like just a small added bonus.

That’s a great photo. And yes please on more food/cinema posts, best of both worlds.
